Mango achaar is one of the most beloved pickles across India, a staple that appears on dining tables alongside everything from dal and rice to parathas and khichdi. Unlike Western pickles, which are typically preserved in vinegar, Indian pickles—or achaars—are made by curing fruits and vegetables with salt, spices, and oil. Every region, community, and family has its own approach, resulting in countless variations.
